Tasting Notes:
The 2004 Croze wine will surpass all your expectations of Napa Cabernet. There is finesse, balance, and yes, all the true old world charm a varietally correct
Cabernet can offer. You are met with sunny wildflower and musk aromas that are
structured together with a blast of fresh ground pink peppercorns. The flavors
have incredibly harmonious elements of worn saddle leather and rivers of fresh,
blood red cassis.
In keeping with the winemaker’s philosophy and style, 2004 CROZE is very drinkable now, but this intriguing Cabernet Sauvignon has the ideal balance for a graceful and long lived wine.
Vineyard Notes:
Grapes for the 2004 CROZE came from Robbins Vineyard just south of St. Helena. This is a sweet spot for Cabernet Sauvignon producing long-lasting, well structured, elegant wines.
Production Notes:
The grapes were harvested September 30th, 2004 and following a slow fermentation, were pressed on October 28th. The wine is comprised of ½ clone 8 and ½ clone 337. Clone 8 was fermented on its natural yeasts while clone 337 was fermented with BM 45 yeast. Both were fermented in half ton bins. On December 5th, the wine was moved to barrel using 1/3 new, 1/3 once filled, and 1/3 twice filled French Oak barrels from the Nevers forest. The wine was racked twice yearly until bottling in July of 2008. Since then it has rested in bottle, allowing the flavors to mature.
Winemaker Notes:
It's a natural with a thick steak or roasted meats. It's also perfect with anything Chocolate. But 2004 CROZE is always at its best when shared with a friend.
Food Pairing:
Traditionally great with grilled or roasted red meats, mushrooms, and other hearty fare. This wine will certainly pair well with Tuesday nights pizza or Saturdays Filet Mignon.
