HANDCRAFTED WINES 2009 SMITH WOOTON CABERNET FRANC from Gallagher's Vineyard, comes to you freshly bottled in it's new vintage and new look. It's wrapped in precious silver on the outside and filled with big, bold, ripe fruit and supple tannins on the inside! Just 225 cases were made. Farmed with Sustainable Agricultural Practices.
The wine opens with aromas of black currant and a touch of ripe plum. There is a violet character as the wine coats the palate. The wine demonstrates classic leather and vanilla notes on the finish. This is a classic Smith Wooton wine that coats the palate and leaves you craving another sip. The wine is incredible now but has the balance to age gracefully for a decade. - Daniel Benton, Sommelier
2006 SMITH WOOTON SYRAH, Tanner Vineyard was aged 54 months in French Oak. This wine is a shining example of a fruit-forward style that beautifully balances very subtle oak spices and clean, focused acidity. Only 275 cases were made. Farmed with Sustainable Agricultural Practices.Expect eruptions of bright, intoxicating cherry candies as you first inhale this mellow Syrah. Lovely red fruits cascade through your whole experience and linger in the finish with impressions of fresh, homemade raspberry jam. - Gabrielle Shaffer, SommelierSMITH WOOTON LIBRARY WINE2004 CABERNET FRANC2004 SMITH WOOTON CABERNET FRANC comes from a long line of Gallagher's Vineyard vintages. The first vintage was produced in 1996. All of our Gallagher's Vineyard wines are 100% Cabernet Franc.The vineyard is located on Napa Valley's Silverado Trail in what is now called the Oak Knoll District. Winemaker, Gary Wooton and Grower, Bryan Gallagher worked together to produce these outstanding Cabernet Francs.
This offering is a very bold style Cabernet Franc with fleshy extraction and a mouthful of both grape and wood tannins. As a 2004 vintage, we might expect to find more aged characteristics, but this wine is still in its youth. Chunky red fruits and a voluptuous texture make this an extremely gluttonous bottle of wine. Grapes for the 2008 Sauvignon Blanc come from Monte Lago Vineyard in the hills overlooking Clearlake, CA. This vineyard produces low yields of intense fruit with bright, crisp flavors and moderate tannins. Grapes are hand picked, crushed and fermented in small lots to preserve fruit character and avoid extraction of harsh tannins. 2008 CROZE Sauvignon Blanc has the characteristics of a white Bordeaux with mature, complex flavors and great balance and depth.This wine reflects the vineyard's low yield of intense, varietally correct fruit. Its bouquet reveals fresh aromas of lime and mineral, flavors of citrus oil and honeydew. The finish is agreeably long and full. Chef David (pronounced Dahveed) shared this simple recipe for fresh pepper sauce. Try it with Tapas including fingerling potatoes, blanched green beans, shrimp, wedges of Iberico cheese and crunchy breads. These Tapas pair well with CROZE Sauvignon Blanc.RED PEPPER SAUCE
1 red bell pepper, seeded and chopped1 clove garlic, peeled and choppedBalsamic vinegar (touch)
Sea salt (pinch)Cayenne (pinch)
Spanish extra virgin olive oilCombine all ingredients except olive oil in a blender. Add just enough olive oil to blend until smooth. Adjust spices to taste. This sauce will keep under refrigeration for several days.Substitute yellow or golden bell pepper for more delicate flavors. Use Grape seed oil Rice Wine vinegar, less garlic and Cayenne. - Suzanne HAVE A WONDERFUL SUMMER!
